Recipe: A Great Pork Roast

2 tbsp. butter
2 tbsp. olive oil
Salt and pepper to taste
2 1/2 c. milk
1/2 c. whipping cream
2 tbsp. Parmesan cheese, grated
3 lb. pork roast (boneless)

1. Melt butter and oil. When butter foams, add pork and brown on all sides over medium heat. Season with salt and pepper.
2. Stir in milk and bring to a boil.

3. Reduce heat (medium low) with partial cover to allow steam to escape for approximately 1 3/4 hours. Baste several times. Meat should be tender.

4. Take out pork and wrap in aluminum foil to keep warm.

5. Cook sauce for 10 minutes. Skim off all fat. Add whipping cream to sauce over high heat stirring with wood spoon. This will melt down all meat fat draining.

6. Place sauce into blender until smooth. Place this sauce again on simmer 1-2 minutes until thick.

7. Cut meat into slices and arrange. Pour sauce over meat. Serve immediately.
