Recipe: Zucchini With Lime Dressing

3 c Thinly sliced zucchini,
-unpeeled
1/3 c Fresh lime juice
1 ts Olive oil
1/2 ts Caribbean hot sauce or hot
-pepper sauce
1/4 ts Cumin
Freshly ground pepper
Dash salt (optional)
Steam the zucchini over boiling water for 4 minutes and drain.
Whisk together the remaining ingredients and sprinkle over the zucchini.
Serve chilled or at room temperature. Yield: 3 cups
