Recipe: Arkansas German Baked Pancake

Arkansas German-Baked Pancake
Yield: 4 Portionen
3 lg Eggs
3/4 c Milk
1/2 ts Vanilla
3/4 c All-purpose flour
1/2 ts Salt
1 1/2 tb Butter
Whipped cream
Apple Filling:
1/4 c Butter
4 lg Granny smith apple, sliced
1/4 c Honey
Heat a 12-inch cast iron skillet in a 450 oven for 5 minutes.
Combine first 3 ingredients in a mixing bowl; beat at medium speed with a
mixer until smooth. Add flour and salt; beat 5 minutes.
Melt butter in skillet; pour batter into hot skillet.
Bake at 450 for 15 minutes; reduce oven temperature to 350 and bake 8
additional minutes or until puffed and browned. Remove from oven; spoon warm
Apple Filling over pancake (pancake will deflate). Sprinkle with powdered
sugar and a dollop of whipped cream. Cut into wedges and serve immediately.
To make the Apple Filling:
Melt butter in a large skillet over medium-high heat; add apple and cook,
stirring constantly for 12 minutes or until tender. Stir in honey; cook just
until thoroughly heated.
