Recipe: Low - Fat Baked Macaroni

1 cup dry macaroni
1/2 cup nonfat milk
1/3 cup chopped red or green pepper, or roasted red pepper in a jar
2 tbsp. grated onion
2/3 cup low-fat cottage cheese
1/3 cup reduced-fat sharp Cheddar
1/4 cup liquid egg substitute
1/8 tsp. paprika
Freshly ground pepper
2 tbsp. seasoned bread crumbs
2 tbsp. freshly grated Parmesan cheese

Preheat the oven to 350 degrees. Cook the macaroni in a pot of boiling water
until al dente, then drain and set aside. Prepare a medium-size baking dish
with nonstick cooking spray and set aside.

Place the milk in a small saucepan over medium heat. Add the chopped pepper
and onion, and bring to a boil. Remove from the heat and add the cottage
cheese, Cheddar cheese, egg substitute, paprika and pepper. Stir to combine.

Place the cooked macaroni in the prepared baking dish and pour the milk
mixture on top. Stir to evenly distribute the ingredients. Sprinkle the top
with the bread crumbs and Parmesan cheese.
Bake for about 25 minutes, or until lightly browned around the edges.

Makes 4 servings.
Each serving has about: 190 calories, 2 grams fat, 6 milligrams
cholesterol, 461 milligrams sodium, 27 grams carbohydrates, 14 grams protein
and 1 gram fiber.
