Recipe: Summer Grilled Beef - Vegetable Kebabs

1 cup flat beer
6 green onions, including some tender green tops, chopped
2 garlic cloves, chopped
1/2 cup soy sauce
1 tablespoon fresh lemon juice
1 tablespoon firmly packed brown sugar
1 tablespoon peeled and chopped fresh ginger or 1/2 teaspoon ground ginger
2 pounds top sirloin, cut into 1 1/2 -inch squares
1 green bell pepper, seeded and cut into 1-inch pieces
1 red bell pepper, seeded and cut into 1-inch pieces
1 yellow onion, cut into 1-inch wedges and separated
2 zucchini, unpeeled, cut into 3/4 -inch slices
12 cherry tomatoes
12 large mushrooms, stems removed

In a bowl large enough to hold the beef, stir together marinade ingredients.
Reserve 1/3 cup of marinade for basting and set aside. Add beef to the bowl
and mix well. Cover and marinate for 2 to 3 hours in the refrigerator,
stirring several times. Bring to room temperature before grilling.

Preheat grill. Remove beef from marinade and discard marinade. Thread meat
on skewers, alternating with vegetables. Grill over medium heat, turning
several times and brushing with reserved marinade, until beef is medium-rare
and vegetables are tender-crisp, 8 to 10 minutes. Serve immediately.
