Recipe: Easter Egg Cookies Ii

1 c Butter; * see note
1/2 c Brown sugar
1 1/2 ts Almond extract
1 lg Egg
1/4 ts Red food coloring; * see

1/4 ts Green food coloring; * see

1/4 ts Yellow food coloring; * see

3 c Flour
1 c Oatmeal

In a large bowl beat butter, sugar, & egg until creamy. Add flavoring. Mix.
Divide butter mixture into 3 equal parts, putting each in it's own bowl.
Add red coloring to one bowl, yellow coloring to another, and green
coloring to the last bowl. Mix. [remember to use different forks for each
to avoid mixing colors] Into each bowl add 1 cup sifted flour. Mix by hand
using a fork. Stir in 1/3 cup raw oatmeal into each bowl. Mixture will be
thick. Using hands, mold dough into egg shapes 1 - 1 1/2 inches in
diameter. [first roll into a ball, then gently shape one end to resemble
small end of an egg.] Place close together, but not touching, on a large
ungreased cookie sheet. [all 3 colors my be baked at same time on same
sheet] Preheat oven to 325 degrees F. Bake for 25 minutes. Cool on a rack.

NOTES : margarine may be substituted for brighter colors increase food
coloring to 1/2 teaspoon experiment with different colors
