Recipe: Beef Salad With Summer Fruit

FRUIT MIXTURE:
3 plums -- chopped, (about 2 1/2 cups)
2 nectarines -- chopped, (about 2 cups)
2 tablespoons chopped fresh mint
1/4 cup frozen apple juice concentrate -- thawed
2 tablespoons white wine vinegar
1 tablespoon oil
SALAD:
1/4 cup firmly packed brown sugar
3 teaspoons dried thyme leaves
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves garlic -- minced
1 1/2 lb. beef flank steak
6 cups torn mixed salad greens
Prep Time: 1 hour
GRILL DIRECTIONS: In medium bowl, combine all fruit mixture ingredients;
toss gently to mix. Cover; refrigerate until serving time.
In small bowl, combine brown sugar, thyme, salt, pepper and garlic; mix
well. Score meat on both sides with crosswise cuts about 1/4-inch deep. Rub
mixture on both sides of steak. Let stand at room temperature for 15 minutes
to marinate.
Meanwhile, heat grill. When ready to grill, place steak on gas grill over
medium heat or on charcoal grill 4 to 6 inches from medium coals.
Cook, uncovered, 12 to 15 minutes or until of medium doneness, turning once.
To serve, arrange salad greens on large serving platter. Cut steak
diagonally across grain into very thin slices; arrange over greens. Top with
fruit mixture.
Note: To broil, place steak on broiler pan, broil 4 to 6-inches from heat
using times above as a guide.
