Recipe: Field Salad With Apricots And Almonds

Ingredients:
8 cups torn red leaf lettuce
1 cup torn radicchio
1/2 cup chopped fresh parsley
1 cup fresh (or canned apricots in light syrup), cut into 1/2-inch strips
3 tablespoons sliced almonds, toasted*
Balsamic vinegar or reduced-calorie dressing (optional)
Directions:
To toast nuts, place under broiler just until lightly browned and fragrant.
This takes just a couple of minutes, so watch them carefully! Combine
lettuce, radicchio and parsley. Divide between 6 salad plates and top with
apricots and almonds. Drizzle with balsamic vinegar or reduced-calorie
dressing.
Yield: 6 servings
Per Serving: 59 calories; 3 g fat; 3 g protein; 5 g carbohydrates.
