Recipe: Cherry Cottage Pudding

1 Pitted red cherries
1/4 c Butter
2/3 c Sugar
1 Egg
1/4 ts Almond extract
1 3/4 c Sifted flour
1 ts Baking powder
1/2 ts Salt
1/2 ts Baking soda
1 c Buttermilk
Drain cherries and save juice for sauce. Cream butter and sugar together
until fluffy. Add egg and flavoring and beat well. Sift flour, baking
powder, salt and soda together. Add alternately with buttermilk in small
amounts, mixing well after each addition. Add cherries. Pour into buttered
cake pan and bake in maderated oven (350 degrees F) about 45 minutes. Cut
into squares and serve with hot Cherry Sauce. Serves 8
