Recipe: Zesty Barbecued Chicken

1 3 1/2-pound broiler-fryer -- cut up and skinned
8 ounce canned tomato sauce
1/2 teaspoon grated lemon rind
1/4 cup lemon juice
1 tablespoon firmly packed brown sugar
2 tablespoons vinegar
1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard
1/4 teaspoon red pepper
1/4 teaspoon pepper
1 clove garlic -- crushed
Trim excess fat from chicken; place chicken in a 12- x 8- x 2-inch
baking dish, and set aside, Combine remaining ingredients in a small
saucepan. Bring to a boil. Cover; reduce heat, and simmer 20
minutes. Pour barbecue sauce over chicken. Cover and marinate in
refrigerator overnight, turning chicken occasionally. Remove chicken
from sauce, reserving sauce. Place chicken, bone side down, on grill
over medium coals. Grill 45 minutes to 1 hour, turning and basting
with sauce every 15 minutes.
Yield: 6 servings (207 calories per serving).
