Recipe: Aunt Jay's Zucchini Pie

3 cups zucchini -- cut small
1 cup Bisquick
1/2 cup Parmesan cheese -- grated
2 tablespoons parsley -- diced
1/2 teaspoon Oregano
1 tablespoon Basil
4 large Eggs
1 medium Chopped Onion
1/2 cup butter -- (1 stick)
Salt & Pepper to taste
Fry the onion in the margarine.
Mix the other ingredients with the fried onions with a wooden spoon in a
large bowl.
Grease with butter or margarine and dust with flour a 9- inch square pyrex
dish and place the vegetable mixture into it.
Bake in a 350~F. degree oven for 40 minutes. Cool on rack. Refrigerate.
Serve warm or cool as a vegetable or side-dish.
