Recipe: Roast Duck With Fruit Stuffing

ROAST DUCK WITH FRUIT STUFFING

4 1/2 lb. duck
1/2 lemon
1 Tbsp. salt
1/2 tsp. pepper
1 tsp. poultry seasoning
Fruit Stuffing:
2 c. seasoned stuffing mix
2 c. chopped apples
1 c. raisins
1 Tbsp. chopped onion
2 Tbsp. butter
3/4 c. water
1/4 c. white wine
1 dash hot pepper
1 dash salt

Wash and clean duck. Rub entire duck inside and outside with lemon. Mix remaining ingredients together: salt, pepper and poultry seasoning. Then rub this mixture all over inside and outside of duck. Be sure to get into all the cracks and crevices.

Melt butter. Add bread crumbs and stir until bread crumbs are lightly browned and well mixed with butter. Add dry ingredients, one at a time, stirring lightly. Sugar should be added last. Stuffing should not be too moist. It should have a slight fall apart, but firm consistency. Duck give off quite a bit of grease that will give the stuffing the balance of the moisture that is needed. Stuff duck and bake in 375 degrees oven for 1 1/2 hours. When finished, pour off most of the fat and remove duck. Remaining fat and drippings should be used for gravy.
