Recipe: Broiled Marinated Flank Steak

3/4 cup thinly sliced green onions
1/2 cup water
3 tablespoons fresh lemon juice
2 1/2 tablespoons low-sodium soy sauce
2 teaspoons olive oil
3/4 teaspoon dried whole oregano
3/4 teaspoon pepper
2 (3/4-pound) lean flank steaks
Vegetable cooking spray
Combine first 7 ingredients in a bowl; stir well. Spoon 1/4 cup plus 2
tablespoons onion mixture into a 1-cup glass measure; set aside.
Place remaining onion mixture in a large zip-top heavy-duty plastic bag.
Trim fat from steaks, and place steaks in bag. Seal bag; marinate in
refrigerator 20 minutes. Remove steaks from bag; discard marinade.
Place steaks on a rack coated with cooking spray; place rack in a shallow
roasting pan. Broil 3 inches from heat 7 minutes on each side or to desired
degree of doneness. Cut steaks diagonally across the grain into thin slices. Set
aside, and keep warm.
Microwave onion mixture at HIGH 45 seconds or until thoroughly heated.
(serving size: 3 ounces steak and 1 tablespoon sauce)
