Recipe: Slow Cooker - Low Carb - Firehouse Chili

2 pounds (1 kilogram) ground chuck
1 1/2 cups (150 grams) chopped onion
4 cloves garlic, crushed
3 tablespoons (21 grams) chili powder
3 teaspoons paprika
4 teaspoons ground cumin
1/4 cup (60 grams) Dana's No-Sugar Ketchup or purchased low-carb ketchup
2 tablespoons (32 grams) tomato paste
14 1/2 ounces (411 grams) canned diced tomatoes
12 ounces (355 milliliters) light beer
1 teaspoon Splenda
2 1/2 teaspoons salt
15 ounces (425 grams) canned black soybeans

In a big, heavy skillet, brown and crumble the beef over medium-high heat.
Drain it and place it in your slow cooker. Add the onion, garlic, chili
powder, paprika, cumin,
ketchup, tomato paste, tomatoes, beer, Splenda, salt, and soybeans. Stir
everything up. Cover the slow cooker, set it to low, and let it cook for 8
hours.

This is good with shredded cheese and sour cream. What chili isn't? But it
also stands on its own very well.

YIELD: 10 servings, each with: 329 calories, 21 g fat, 21 g protein, 12 g
carbohydrate, 4 g dietary fiber, 8 g usable carbs.
