Recipe: Apple Prune Stuffed Chops

Preparation time: 15 to 20 min. Cooking time: 35 min.
For 4 servings you will need:
4 extra thick (1 1/2-inches) loin pork chops
1 large apple, unpeeled, cored, chopped
12 pitted prunes, chopped
2 Tbsp. brown sugar, packed
1/4 tsp. each allspice and salt
2 Tbsp. olive or cooking oil
1 1/2 cups dry white wine or broth plus
4 Tbsp. fresh lemon juice
3/4 cup whipping cream
Preparation:
1. Make a sl it to form a pocket from fat edge of each pork chop.
2.Mix apple, prunes, brown sugar, allspice and salt. Divide mixture into 4
parts. Stuff each pork chop with a portion. Skewer shut with toothpicks.
3. Heat oil in heavy skillet. Add chops. Brown slowly over medium heat about
5 min. each side until browned. Add wine or broth and lemon juice. Simmer
for 30 min.
4. Remove chops. Keep warm. Heat juices in pan to boiling. Boil until
reduced to a glaze and about 1/3 cup volume. Add whipping cream. Boil,
stirring up brownings to make a caramel-colored sauce. Return chops to pan.
Reheat.
5.Transfer to serving platter. Pour sauce over chops. Garnish with tomatoes
and watercress. Serve immediately.
Good served with: Homemade whole wheat pasta and spinach salad.
