Recipe: Cajun - Style Haddock

14 1/2 ounces canned stewed tomatoes -- undrained
2 medium stalks celery -- chopped
1 medium onion -- finely chopped
1/2 medium green pepper -- seeded and chopped
1 clove garlic -- minced
1 bay leaf
3/4 teaspoon dried whole thyme -- crushed
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon hot sauce
1 1/2 pounds haddock fillets
Vegetable cooking spray
Combine first 10 ingredients in a medium saucepan, stirring well.
Bring to a boil. Cover; reduce heat, and simmer 25 minutes, stirring
occasionally.
Rinse fillets with cold water, and pat dry. Arrange fillets in a 12-
x 8- x 2-inch baking dish coated with cooking spray. Bake,
uncovered, at 400 for 15 minutes or until fillets flake easily when
tested with a fork. Remove bay leaf from sauce mixture, and discard.
Serve immediately.
Yield: 6 servings (126 calories per serving).
