Recipe: Chicken Thighs With Sweet Red Onions And Balsamic Vinegar

2 teaspoons olive oil
1 pound red onions cut into 1/2-inch slices about 3 medium
1/2 teaspoon pepper divided
1/4 teaspoon salt divided
2 pounds chicken thigh without skin
1/4 teaspoon oregano
1/4 teaspoon marjoram
4 teaspoons balsamic vinegar divided
2 teaspoons parsley flat-leaf, chopped
4 slices lemon

Heat oil in a large non-stick skillet over medium heat. Add the onion,
1/4 tsp each salt and pepper. Saute 5 mins.Add remaining salt and
pepper, chicken, oregano, and marjoram to pan and sprinkle with 3 tsp
vinegar. Cover, reduce heat, and simmer 25 mins or until chicken is
done. Uncover, increase heat, and cook 2 mins or until liquid almost
evaporates. Stir in 1 tsp vinegar and sprinkle with parsley. Servie with
lemon wedges.
