Recipe: Any Pasta Meat Sauce

2 tablespoons olive oil
1 cup chopped onion
2 cloves garlic minced
1 small carrot finely chopped
2 tablespoons finely chopped
celery
3/4 pound lean hamburger
1 28 ounce can tomatoes chopped
2 6 ounce cans tomato paste
2 6 ounce cans water
1/2 cup minced parsley
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon salt
1/8 teaspoon pepper
In oil saute onion, garlic, carrot and celery until tender.
Add hamburger and brown. Add remaining ingredients. Bring
to a boil. Cover and reduce heat to simmer for 1 1/2 hours.
Makes 6-7 cups.
