Recipe: Baked Peaches Italian Style

Yield: 6 Servings
6 Whole peaches; ripe
5 tb Lemon juice
1 1/2 c Cookie crumbs; Amaretto
2 tb Brown sugar
1/3 c Butter; softened
3/4 c Amaretto liqueur; approx.
Several hours in advance, peel, seed and halve the peaches and dip in lemon
juice. Place in a shallow casserole. Combine cookies, sugar and butter and
blend well. Fill hollow of each peach half with about 1 tablespoon of the
filling and sprinkle a little liqueur over each. Bake, uncovered, for 30
minutes at 375 or until peaches are softened and golden. Serve with peach
or vanilla ice cream.
