Recipe: Hummus With Sun - Dried Tomatoes

Dried tomatoes paint this hummus a pretty red.
1 (7-ounce) jar dried tomatoes in oil
1 (15 1/2-ounce) can chickpeas (garbanzo beans), rinsed and drained
1 garlic clove, halved
1/2 cup mayonnaise
1/4 cup freshly grated Parmesan cheese
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/8 teaspoon ground red pepper
Drain tomatoes, reserving 3 tablespoons oil.
Process tomatoes, reserved oil, chickpeas, and remaining ingredients in a food processor until smooth, stopping to scrape down sides. Serve with
olives and toasted pita bread. Yield: 2 1/2 cups.
