Recipe: Japanese Beef Bowl

Japanese Beef Bowl
Yield: 1 Servings

----EGG AND LEMON SAUCE----
1 1/2 c Stock
1 tb Cornflour
3 Eggs; separated
1 Lemon (juice only)
Salt
Freshly ground white pepper
2 1/2 lb Stewing lamb, cut in cubes
1 1/2 Lemon
1/2 c Butter
2 lb Chopped tomatoes
2 ts Salt
1/4 ts Pepper

Fry bacon until crisp in skillet. Remove
with slotted spoon and drain on p Prepare two (8 or 9-inch) thin pancakes,
using pancake mix. Cut 8 slices of bacon into pieces 1-inch long. Panfry
until lightly browned. Drain. Cook 8 additional bacon slices. Drain and
keep warm. Prepare favorite scrambled eggs using 6 eggs. Just before eggs
are completely cooked, stir in bacon pieces and 1/2 cup each of cooked,
chopped onion and green pepper. Spread each pancake with 1/2 egg mixture.
Roll up, jelly roll fash- ion. Serve with remaining bacon slices and, if
desired, garnished with fried apple slices. Yield: 4 to 6 servings.
