Recipe: Asparagus With Creamy Lemon Sauce

1 pound asparagus, tough ends snapped off
1 tablespoon butter
Salt and freshly ground pepper
Creamy Lemon Sauce (recipe follows) for topping

In a large skillet over medium heat, cook asparagus in gently boiling,
lightly salted water to cover until tender-crisp, 5 to 6 minutes. Drain well
and add butter, salt and pepper to taste. Serve with a dollop of sauce on
top.

Serves 4.

Creamy Lemon Sauce
This sauce is also good as a dipping sauce for artichokes.

1/4 cup mayonnaise
1/4 cup plain nonfat yogurt
2 tablespoons fresh lemon juice
2 drops Tabasco sauce
1/4 teaspoon salt

In a small bowl, mix together all ingredients until smooth. Serve at room
temperature.

Makes about 1/2 cup.
