Recipe: Cheese Bread Pudding

2 c Bread cubes
1 c Cottage cheese
1 1/2 c Milk
1/4 c Melted butter
2 Eggs; beaten
1 tb Lemon juice
1/4 c Sugar
1/4 ts Salt
1/4 ts Grated lemon rind
Combine bread with cottage cheese, milk and melted butter; add remaining
ingredients and pour into buttered casserole. Bake in moderated oven (325
degrees F) 1 hour or until a knife inserted in center comes out clean.
Serve hot or cold with cream. Serves 6
