Recipe: Blueberry Cheese and Cinnamon Souffle

1 stick margarine
1 package frozen blueberry blintzes (6 in the package)
1 package frozen cheese blintzes
1 pint sour cream
4 eggs
1 teaspoon vanilla extract
1/2 cup sugar
Cinnamon, for sprinkling

Preheat the oven to 325 degrees. Place the margarine in a large shall
ow
baking dish. Melt the margarine in the oven for 10 minutes. Arrange b
lintzes
in the dish, alternating berry and cheese blintzes. In a mixing bowl,
beat
together the sour cream, eggs, vanilla and sugar. Pour over the blint
zes.
Sprinkle with cinnamon. Bake 45 minutes to 1 hour, until hot and bubb
ly.
