Recipe: How To Cook Artichokes

4 qt Water
2 ts Salt
4 -6 tb lemon juice or vinegar
1/2 -1 tb olive (or to taste)
1 -2 bay leaves (optional)
10 -12 whole peppercorns
4 lg Trimmed artichokes
(4" diameter before trim) or
- 6 to 8 md artichokes
(2-3/4" to 3-3/4")
Combine all ingredients except artichokes in a 5-qt pan and bring to boil.
Add artichokes, partially cover with lid and return to boil. Cook until
stem end is easily pierced with a fork, allowing aboutg 25 to 30 minutes
for md and 40 to 50 minutes for lg artichokes.
