Recipe: Baja Corn Chowder

1/4 c. butter or margarine
3 cans (17 oz. ea.) whole kernel corn, drained, divided
1 med. red bell pepper, diced
2 c. chicken broth
1 qt. half and half
1 can (7 oz.) diced green chiles, drained
1 pkg. (1.27 oz.) Lawry's spices & seasonings for fajitas
2 c. (8 oz.) shredded Monterey jack cheese
1/2 t. Lawry's seasoned pepper
hot pepper sauce to taste

In Dutch oven or lg. saucepan, melt butter. Add one can corn and bell peppe
r; saute 5 min. Remove from heat. In food processor or blender, place rem
aining two cans corn and chicken broth; process until smooth. Add to Dutch
oven with half and half, chiles and spices & seasonings for Fajitas. Return
to heat. Bring just to a boil, stirring constantly. Remove from heat; blen
d in cheese, seasoned pepper and hot pepper sauce. Makes 4 to 6 servings. S
prinkle with additional Monterey jack cheese and fresh cilantro, if desired
